Het begint weer kouder te worden en het wordt eerder donker. Natuurlijk pak je dan een kopje thee erbij na je lange dag school of werk. En wat is er dan lekkerder dan zelfgemaakte koekjes voor bij de thee? Het is zó simpel om te maken, maar toch wilde ik dit recept even delen.
Naast simpele koekjes met een gat erin (waarom niet), maakte ik ook koekjes met chocoladepasta erop. Achteraf proefde je de chocoladepasta niet eens, omdat het hard was geworden, maar het was maar om te proberen. Ook hadden we die koekjes 11 minuten gebakken in plaats van 10, en waren ze nét niet verbrandt. Dus ik geef je een tip: beter te kort dan te lang bakken! Gelukkig hadden we de andere koekjes wel gewoon 10 minuten gebakken.
Recept
- 230 gram bloem
- 1/2 theelepel bakpoeder
- snufje zout
- 125 gram boter op kamertemperastuur
- 90 gram basterdsuiker (eigenlijk was het kristalsuiker)
- 90 gram donkere basterdsuiker (voor de kleur)
- 1/2 theelepel vanillesuiker
- 1 ei
- Optioneel: 170 gram pure chocolade (heb ik niet gedaan)
Bereiding van de koekjes:
1) Verwarm de oven voor op 190 °C.
2) Ik kan het nu heel moeilijk gaan maken, maar laten we het simpel houden: doe alle droge ingrediënten in één keer bij elkaar.

3) Voeg nu de boter toe. Heel handig is het niet, zo’n groot stuk boter: daarom is het handig om er een mes bij te pakken en de boter in stukken te snijden. Dit kan gewoon nadat je de boter in je mengkom hebt gedaan.
4) Als laatste moet je nog het ei toevoegen.
5) Nu begint het ergste – of, nouja, laten we het positief houden, het leukste begint nu: het kneden van je beslag. Inderdaad, gewoon met je handen. Heerlijk. Ahum. Maar op een of andere manier is het wel ontspannend, haha. En geef niet te snel op trouwens. Het kan nogal lang duren voordat alle ingrediënten aan elkaar blijven zitten.
6) Rol het beslag uit en gebruik een glas of een vormpje om de koekjes te maken. Ik had met een ehm.. *zoekt woord op op Google* appelboor gaatjes gemaakt in de koekjes. Blijkbaar wordt het ook appel klokhuis verwijderaar genoemd maar dat klinkt al helemáál niet. Maar goed. Dat ding is dus perfect om gaatjes te maken in je koekjes, mocht je dat willen doen.
Een andere manier om de koekjes te maken: maak balletjes deeg zoals je in dit artikel ziet. Deze balletjes lopen nog uit. Het is de perfecte manier om wat dikkere koekjes te krijgen. Hier kwam ik achteraf pas achter, anders had ik het natuurlijk op die manier gedaan.
7) Mijn dunne koekjes had ik 10 minuten in de oven gedaan. Heb je wat dikkere koekjes gemaakt, dan zou ik ze 11 minuten in de oven doen. Maar doe ze vooral niet te lang in de oven.
Je kunt ze bakken op een bakplaat met bakpapier, maar in plaats van bakpapier kun je ook een speciale bakmat gebruiken. Zo’n bakmat vind je hier op de site van Hema en kan je hergebruiken. Zo hoef je niet steeds bakpapier te kopen! Misschien een leuk sinterklaascadeau? Wij hebben thuis trouwens ook zo’n bakmat, maar die heb ik nu niet gebruikt. Zo’n knalrode bakmat wil je natuurlijk niet op de foto’s in je artikel hebben.
En dit waren de koekjes met chocolade pasta. Tip 1: doe er geen chocoladepasta op. Tip 2: doe je dunne koekjes geen 11 minuten in de oven, maar gewoon 10.
Uiteindelijk waren bijna alle koekjes, op twee na, nog dezelfde avond opgegaan. Dit simpele recept ga ik zeker nog eens maken! Maar dan mét chocolade en dan maak ik de koekjes wat dikker. Maar ook op deze manier waren ze goed gelukt.
